1、 长沙市民牛肉干消费状况社会调查报告长沙市牛肉干消费状况调查报告 学 生：* (*班，学号*) 摘 要：近年来，我国人民生活水平逐年提高，含有丰富营养的牛肉干越来越受到人们的欢迎，而长沙市作为中部较大城市，牛肉干的需求逐年上升。为了了解长沙市市民对牛肉干的消费状况，我于2013年7月至8月对长沙市民牛肉干消费状况进行调查，其间曾发过问卷，在各大超市观察过牛肉干的购买情况，给市民做过试吃。通过各方面的努力，我不仅了解到长沙市各品牌牛肉干的具体消费情况，自身也得到了锻炼，可谓一举两的。 关键词：长沙市； 牛肉干; 消费；调查 一、调查概况 调查前期阶段，我在大润发芙蓉店前面的广场上向市民发放调查问
2、卷，市民拿到问卷当场填好并交给我。十天内，我发放的调查问卷共50份，成功有效回收50份。之后，我在家润多、家乐福、东之源三家超市内的牛肉干卖场做过观察。为了进一步了解市民对牛肉干的态度，八月份，我在一些街道口让市民品尝各种牛肉干，并让他们说出自己的看法。 二、调查对象 在问卷调查的对象中，男性占40%，女性占60%。14岁以下占30%，14至25岁占32%，25至45岁占22%，45岁以上占16%。市民的月平均收入主要在1000到2000元左右。在被问及是否有吃牛肉干习惯时，有30%的市民经常吃，而将近60%的市民是偶尔吃，还有一些市民根本不吃。通过抽样调查得出56%的市民平均每月购买牛肉干的
3、支出在100元以下，有30%的市民在100至200元之间。 三、调查结果 调查结果显示，有72%的牛肉干购买者在购买牛肉干时会考虑到产品的品牌，而有28%的市民则不考虑产品品牌。通过对50位市民的对查得出有32%的人会购买棒棒娃牛肉干，36%的人选择购买母亲牛肉干，32的人则是其他品牌的牛肉干，如天喔、拿趣等。在这50为市民中，大部分是通过朋友推荐、户外广告和电视广播等途径了解到相关牛肉干的信息的；而绝大部分的市民都是通过到专卖店或到超市去购买牛肉干，订购和接受上门推销的很少很少。被调查的市民大部分喜欢袋装牛肉干，而在购买牛肉干的原因中，有56%的市民出于牛肉营养好，30%的市民主要是由于自己
4、或家人喜欢吃牛肉干，有吃牛肉干的习惯。市民在对牛肉干的选择时，有32%的市民注重牛肉干的包装，25%注重牛肉干的口味，30%注重牛肉干的价格和质量。 此外，经历过各种食品安全问题的风波，随着人们生活水品的不断提高，随着人们对牛肉产品各方面的要求不断提高，人们对牛肉干行业存在的一些问题也较为担忧。在我们调查小组调查的50位市民中，他们认为现在的牛肉干行业主要存在质量问题、价位较高、牛肉干信息不透明、包装不好看、口味不新鲜、种类繁多和部分牛肉干产品有异味等。人们都希望在国家相关部门和牛肉干厂商的共同努力下，能为消费者提供一个绿色优质良好的牛肉干行业，从而满足人们对牛肉干的需求。 而且，市民绿色消费
5、意识明显增强，农村居民消费观念有待转变。 城区消费者高度关注食品安全问题，大部分消费者愿意为保障食品安全和提高食品健康营养价值支付少量的额外费用。而处于低收入阶层的农村消费者购买食品的价值取向主要是“价格优先”和“实惠”。群众对食品安全的认知度有所提高，关注点不断增加。虽然目前消费者的食品安全意识总体上还不是特别高，但随着经济的不断发展，人民生活水平不断提高，食品安全正逐渐为广大群众所重视。其中，群众对食品安全的认知度在提高，关注度亦然。城乡食品流通领域的交易环境、物流设施等产生新的变化，食品安全管理监督和市场管理机制有待加强。在农村，现在出现了一大批小型自由集贸市场，那些小摊位的货主定时定期
6、到村里摆摊，为农村食品交易环境注入了新的元素。一些初具规模的代销点货架上的食品种类也越来越多，这在给居民提供便利的同时也给食品安全监管和市场管理带来了困难。 通过以上数据资料可以看出，被调查的对象在性别和年龄分布都比较均衡，不过在所有被调查对象中，月收入总体都比较低，并没有涉及到高收入人群，这对于我们的调查目的本身来说有些遗憾。而且从所调查得到的数据中明显看出一大部分人并没有每天或经常吃牛肉干的习惯，这说明牛肉干市场还存在很多潜力可挖掘，还有部分消费者需要进行针对性的刺激，激活他们对牛肉干的消费需求，从而提高牛肉干市场的消费量，促进牛肉干行业的发展。在所有被调查的市民中，他们在购买牛肉干支出方
7、面都比较少，或许跟自身的收入有关，不过在这方面还是显示出人们现阶段对牛肉干的需求还是有些不足，在人们生活水平不断提高的同时，也需要刺激人们对牛肉干购买支出的增加，这样才有可能进一步促进牛肉干市场的需求和发展。 四、调查深入分析 通过这次调查得到的一个共识就是人们在购买牛肉干时都比较注重产品的品牌，因此牛肉干生产厂商想要提高自身的牛肉干产量，并且在牛肉干市场竞争中占有一定优势，就必须着重打造自身牛肉干品牌，提高消费者对自身牛肉干品牌的满意度和忠诚度。在现阶段牛肉干市场环境中，打造牛肉干品牌产品必须对牛肉干市场进行深入研究分析，并做出正确的市场决策和市场战略，这就需要牛肉干生产厂商在这些方面的能力
8、和投入了。虽然如今牛肉干的种类繁多，不过真正在人们的心目中树立起品牌形象的牛肉干产品并不多，而且在这次调查中，人们大多数都比较青睐母亲、棒棒娃、光明等这样比较有名气牛肉干品牌，在经历了一系列牛肉制品质量问题风波后，母亲、棒棒娃等品牌虽然经历了一段低谷，不过从新整顿和改善决策战略后又重新焕发出自身的品牌能量，因此在牛肉干市场格局中仍然没有发生太大变化。不过从中也可以得出，牛肉干品牌是一点一滴积累起来的，并且经得起市场检验的和赢得消费者信任的。 随着人们生活水平的不断提高，人们对牛肉干的需求主要是出于牛肉干可以提供丰富的营养，有利于人们的身体健康。而且在这次调查数据中，人们购买牛肉干时还十分注重牛
9、肉干产品的包装、口味、质量和价位等。因此想要打造自身的牛肉干品牌，不仅要学会创新，建立自身的独特性，还要着重在牛肉干的营养、包装、口味、质量和价位等重要方面加大开发投入，结合牛肉干市场的实际需求状况，生产符合消费者需求的牛肉干品牌产品。 从调查中也显示出群众对食品安全认知度有所提高，关注点在不断的增加。虽然目前消费人群的安全意识总体上不是特别的高，但随着经济的发展，使人民生活水平不断提高。食品安全正逐渐受到广大人民的重视。消费者一般通过报纸、电视新闻、网上查询来关注食品营养与食品安全事件。因此广大群众对食品安全的认识度与要求的关注达到了近几年都难达到的高潮，食用产品是否安全是否影响安全以至于威
10、胁到生命安全成为了老百姓热门话题。使得现今基本居民大多都知道一些食品安全事件，而且有很多的人声称食品广告带来了部分影响，因此看来继续保持和加强媒体对食品营养与安全事件的报道和宣传力度是很有必要的。随着群众消费观念越来越理性，对食品安全也越来越重视。消费人群开始非常关注食品的生产厂家、生产日期、保质期、品牌、质量标志、成分和营养等，注重的查看食品是否含有色素、防腐剂、食添加剂。从调查中发现大部分人群认为大型且有信誉的商场里的食品比较安全，比如；在超市里面包小摊不会出现过期、发霉，等等。且大多的消费者表示对于买到伪劣、变质有毒的食品后，怎样才能得到妥善的解决，有效的维权，怎样投诉，向谁投诉、投诉。
11、食品安全问题出现原因有以下几点:法律法规体系不完善。目前，我国的食品安全规定比较粗放，缺乏具体的评判标准，缺少一个更为完善的食品安全法规，食品安全管理主要依靠行政管理。尽管我国在1996年就出台了食品添加剂使用卫生标准，目前还没有统一的检测方法和标准，这给检验苏丹红一号带来了判定依据上的不足，禁而不查，查而无标准可循，使得苏丹红一号在我国明令禁止其作为食品添加剂使用的情况下，依然时有发生苏丹红事件。食品安全多头监管。 目前，我国食品安全监管体制是一种“分段管理为主，品种管理为辅”的模式，导致食品安全管理出现条块分割、沟通不畅，同时食品安全多头监管的局面导致一些领域重复检测，而一些领域得不到检测
12、，出现监管上的漏洞甚至“真空”。如监管“鸭蛋”的就有食品药品监管部门、农业、质检、卫生、工商和商务部门，却未能阻止“红心鸭蛋”的出现，使不少消费者“谈蛋色变”。食品安全标准体系不健全。主要表现在与国际标准不能接轨，食品安全标准体系结构设计不够合理，对标准的深人研究不够，部分标准的实施较差，甚至强制性标准也未得到很好的实施等。食品安全信用体系建设有待加强。我国社会信用体系建设刚刚起步，食品安全方面的信用体系建设仍相对滞后。目前，掌握企业食品卫生质量的信用状况难度很大，很难起到消除信息不对称、鼓励守信者、打击遏制失信者、追溯责任、形成诚信经营氛围的作用。如在长达近1个月的苏丹红一号围剿中，在中国市
13、场上，竟无一家企业主动向消费者发布警示，向执法部门通报情况，特别是号称要在中国做负责任的企业的跨国公司，既未对其产品从原料到生产的各个环节展开全面调查，又未在基于事实的基础上第一时间把相关信息向消费者发布，而是推卸责任，尽力为自己开脱。 从所调查得到的资料中还可以看出，人们对上门推销牛肉干并不是很感兴趣，主要购买方式还是到超市或者牛肉干专卖店购买。因此，在上门推销这一块还有很大潜力可挖掘，只要能让消费者买得放心，提高消费者对上门推销牛肉干产品的满意度，想必人们一定会增加对上门推销牛肉干产品的购买。虽然牛肉干行业在不断的发展，但是仍存在着许多问题。在当今人们更加注重生活品质的时代，每个人都会对牛
14、肉干的卫生安全、质量和口味等提出更高的要求，因此牛肉干行业必须认真解决存在的问题，注重企业利益和消费者利益、社会利益紧密结合。 五、调查思考建议 作为市场中的细胞，企业必须以身作则，转变生产经营方式，与时俱进，开拓创新，以科学管理理念引领企业走向成功。 （一）要把牛肉干质量和卫生安全放到第一位，同时在牛肉干口味、包装、价格等方面加大创新力度，努力打造自身品牌，注重细分市场和系列产品，根据消费者切实需求，生产出符合消费者需求的各种牛肉干产品。 （二）要加大牛肉干产品的宣传力度，加强广告投入，增加营销力度，根据有关调查不难看出，广告投入及市场宣传的大小，与牛肉干品牌的市场认知度和购买情况有着一定的
15、关联度，提高人们对牛肉干品牌产品的认知度，从而增加牛肉干的的需求。并同时拓宽销售渠道，积极开发上门推销牛肉干产品这一细分市场。 （三）加强与消费者的沟通与交流，让生产流程得到一定的透明化和保障化，使消费者对企业的牛肉干产品感到信任从而放心购买。同时不断从市场中吸取经验教训，完善自身产品，提高企业的市场竞争优势。 （四）要从企业的长远利益出发，注重企业利益和消费者利益、社会利益相结合，使企业得到长足发展，这样才能真正成为消费者值得信赖的著名企业。 （五）国家必须完善对牛肉干行业的相关监督检查机制，加大对违反相关法律法规的企业的惩罚力度，整顿不符合相关要求的牛肉干生产企业，为消费者创造一个良好的牛
16、肉干行业，使消费者的切身利益得到保障。并采取相应措施提高人民的收入水平，让人们能够增加对牛肉干产品购买支出，从而促进消费者对牛肉干产品的需求，促进牛肉干行业的不断健康发展。 其实，我国的食品安全状况从总体上说是好的。党和国家一向高度重视食品安全问题，把保障食品安全视为关系人民群众切身利益，关系社会和谐稳定，关系我国社会主义现代化建设全局的重大任务。改革开放以来，我国农业标准化能力大大加强，优质品牌农产品市场占有率稳步提高；食品工业持续快速健康发展，部分食品企业加工技术和装备接近或达到国际领先水平，大型企业普遍拥有世界一流水平的生产设备和检验设备。同时，一套基本完整的食品安全法律体系已初步形成；
17、一套各部门联合行动，分段监管为主，品种监管为辅的监管体制也已建立起来，基本覆盖了食品从生产到流通再到消费的各个环节。但是，保障食品安全又是一个非常复杂的问题。由于从食品种植到消费的环节多，各监管部门之间协调难度大，涉及的行业发展水平不一，涉及的利益关系复杂，因此，保障食品安全是一个系统工程，具有长期性和艰巨性。希望通过社会的舆论监督与相关部门的有效控制可以给广大老百姓一个放心安心的饮食生活环境。 六、结束语 通过本次对长沙市市民牛肉干消费状况的调查，我得到了一次很好的锻炼机会。同时，我也发现，其实长沙市牛肉干市场仍面临着很多问题，这可能也是中国牛肉干市场的一个缩影。因此，想要让我国的牛肉干行业
